2 to 2 1/2 c. cooked squash, mashed and salted (hand mixer can be used)
6 eggs
2 c. milk (1 large can evaporated milk, finished with regular milk)
1 tsp. vanilla
4 Tbsp. corn starch (mix with a little of the above milk, and it won't lump)
2 c. sugar
1 tsp. cinnamon
1 can (3-1/2 oz.) coconut - if desired

Directions:

Bake at 425º for 30 minutes.
Reduce oven heat to 375º and bake for another 30 minutes.

Makes 2 9"- pies usually with some left over, if you use a hand mixer on the squash.
