flour tortillas
olive oil
1 whole boneless chicken breast, sliced into strips
1 t. paprika
1 t. cumin
salt and pepper to taste
1 medium onion, chopped
3 cloves or more garlic, peeled and chopped
1 can green chiles
1/2 cup dried mushrooms, re-hydrated in water, broth, or cognac
1 cup sour cream
manchego cheese

Directions:
Directions:
Preheat oven to 350º F
Oil a 9 x 13" casserole, and line with flour tortillas.
Heat oil and add the sliced chicken. While the chicken is browning, add paprika, cumin, salt, and pepper. When almost done, spread over the tortillas.
Saute onion in the same pan, adding more oil if necessary. When translucent, add garlic and cook for 1-2 minutes. Add canned green chilies. Mix. Add mushrooms with their liquid. Mix and cook down if necessary. Pour over chicken. Spread sour cream over the mushroom mixture and sprinkle the cheese over all.
Bake/broil until cheese is brown and casserole is bubbling.
