2 c. flour
3/4 c. cold butter
1/4 c. cold milk
3 T. sugar
2 egg yolks, lightly beaten

Filling:
1 1/2 c. sugar
1 1/2 c. whipped cream
1/2 tsp. cinnamon
1/4 tsp. salt
2 c. coarsely chopped walnuts

Oven - 375º.

In a bowl, combine flour and sugar. Cut in butter. Combine egg yolks and milk; Stir into flour mix until blended. With lightly floured hands, press dough into one bottom and 1 " up the sides of a 12" tart pan with removable bottom.

Line unpricked shell with double thickness heaqvy duty foil. Place pan on a 15" x 10" x 1" baking pan. Bake at 375 for 12-15 min.

Filling:
In saucepan, combine sugar, cream, cinnamon, and salt. Bring to a boil, stirring constantly. Remove from heat, stir in walnuts. Remove foil from shell; pour filling in. Bake 20-25 min. Cool. Store in refrigerator.
