"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Generous handful of raisins
Boiling water to soak the raisins

Directions:
Directions:
Soak a generous handful of raisins in boiling water until soft. Drain well (I squeeze mine to make them nice and dry). Make tea biscuit dough – see recipe in this book. On a floured board roll the dough into a long rectangle 10 -11 centimeters by what ever length it happens to be and about 1 to 1.5 centimeters thick.
Spread lightly with softened butter. Fingers work best.
Lightly sprinkle with brown sugar and cinnamon.
Sprinkle with drained raisins.
Roll to make a long log.
Pinch to seal seam or seal seam with a little water.
Cut into 1.5 centimeter slices.
Bake on greased cookie tray. I do them at 350 º F till slightly browned; about 15 minutes or until they look done.
Remove from the cookie sheet while they are still hot and put on rack to cool.
