1 heaping tsp. whole cloves
1 1/2 tsp. black cardamom seeds (You will need about about 10 whole cardamom pods)
6 heaping tsp. cumin seeds
1 tbsp. pounded cinnamon sticks
¼ tsp. ground mace
¼ tsp. ground nutmeg

Turn on stove exhaust fan. In a heavy bottomed frying pan heat cloves, cardamom seeds, cumin seeds, and cinnamon sticks over medium high heat, stirring constantly. When the cumin seeds are a darker shade of brown remove the spice from the heat. Transfer spice to a bowl and allow to cool for 20 minutes. Place the roasted spice, mace, and nutmeg in a spice (coffee) grinder and grind till it has the consistency of ground black pepper. Can be used right away or will keep for 6 months in a dark cupboard in an airtight container.

The quality of cardamon varies. If it is fresh the seeds in each pod will be dark coloured and will not look dry.
