Ingredients: ½ cup balsamic vinegar 2 tbsp. freshly squeezed lemon juice 2 tbsp. freshly squeezed orange juice 1 tsp. grated lemon peel 1 tsp. grated orange peel 2 cloves garlic finely minced ¼ cup thinly sliced fresh basil 1 tsp. fresh oregano finely chopped ¾ cup extra virgin olive oil 8 ounces fresh goat cheese cut in ½ inch slices ¼ cup finely chopped sweet bell pepper

Directions:Mix vinegar, lemon and orange juice, lemon and orange peel, garlic, basil, and oregano in a medium bowl. Gradually whisk in the oil. Season to taste with salt and pepper. Pour mixture into a glass baking dish that is big enough to hold all the slices of goat cheese in 1 layer. Add cheese and turn to coat. Refrigerate for 2 hr. or up to 2 days. Transfer cheese to serving dish. Sprinkle with chopped bell pepper and serve with crackers or French bread. |

Notes: Can use a little dried oregano if fresh is not available. Do not substitute dried basil for fresh basil. In a pinch you can use fresh parsley instead of basil. For a short stick of goat cheese (4 ounces) half of this is plenty. You can add chopped nuts or green onions to the top of the goat cheese on the serving plate. A combination of red and green bell pepper is a nice touch at Christmas time. I make this right in the serving dish and pour off some of the marinate before serving. Reserve the marinate and dip crusty bread in it for a tasty snack. If you are in a rush. you can just pour some good balsamic vinegar and a little olive oil over some fresh goat cheese.
