1 cup chopped onion
1 each red and yellow peppers, chopped
2 garlic cloves, minced
2 tbsp. vegetable oil
1 tbsp. chili powder
1 tsp. ground cumin
2 cups vegetable stock
1 14.5 ounce can whole peeled or stewed tomatoes, including liquid
1 cup bulgur
1 16-ounce can red kidney beans, drained
1/4 cup chopped parsley

In a 3-quart casserole dish, stir together onion, peppers, garlic and oil. Cover with lid and microwave on high for 3 minutes. Stir in chili powder and cumin. Stir in stock and tomatoes, breaking them up with the back of a spoon. Re-cover and microwave on high for 6 minutes. Stir in bulgur and re-cover and microwave on medium for 15 minutes. Stir in beans and parsley and re-cover and microwave on medium for 10 minutes. Let stand for 4 minutes.
