6 beets
2 cup sugar
2 cups water
2 cups vinegar
1 tbsp. cinnamon
1 tsp. cloves
1 tsp. allspice

Directions:
Directions:
Select young, tender beets. Wash and leave 2 inches of stem. Boil for 15 minutes. Dip in cold water; rub off skin. Make syrup of sugar, water, vinegar and spices. Add beets and boil for 15 minutes. Pack beets in hot, sterilized jars, filled to overflowing with boiling syrup and seal immediately.
