7 pounds rind
4 pounds brown sugar
2 quarts vinegar
1 ounce cinnamon (stick)
1 ounce white ginger
1 ounce cloves (whole)
Rind of 2 lemons

Directions:
Directions:
Cut rind from melons that are ripe but not soft. Peel thickly. Wash and drain thoroughly. To 2 quarts of vinegar add four pounds of brown sugar and one ounce each of cinnamon, white ginger, and whole cloves with the rind of lemon. Boil the vinegar and sugar together and remove any scum that rises. Add the spice and let boil a few minutes, then put in the fruit and let it boil until the syrup looks a little thick. Pack into sterilized jars and cover with boiling hot syrup.
