4 chicken breasts pounded down to 1/4 thickness
1 egg
3/4 c. Italian bread crumbs
1/4 safflower oil
3 T fresh lemon juice
1/2 c. pinot grigio
1 tsp. water
2 T. chopped fresh parsley

Directions:
Directions:
in a small bowl, beat egg and add water. Heat skillet with oil over med heat. Dip chicken in egg batter in dip into bread crumbs and add to hot skillet. cook until golden about 5 minutes each side. Remove chicken from pan and add wine, lemon juice, garlic and parsley. reduce liquid and put chicken back into pan for a few minutes turning once. All liquid should be absorbed into the chicken.
