2 C cooked instant rice
1 C sour cream
1 can cream mushroom soup
1 (4 oz) can chopped green chilies
1 (3 oz) Velveeta cheese, diced
1 (3 oz) Monterey Jack cheese, diced

Mix all ingredients together and bake @ 375 degrees for 20-25 minutes.

Mom would make this for potlucks sometimes. It is super easy to throw together & goes great as a side dish with Mexican food.
