2 c. sugar
1/2 c. shortening
2 egg whites
1 tsp. baking soda
1 3/4 c. buttermilk
2 3/4 c. sifted cake flour
1 tsp. vanilla
Pinch salt

Directions:
Directions:
Oven - 350º.

Cream 2 c. sugar and 1/2 c. shortening. Add 2 egg whites, one at a time, beating at medium speed.
Add 1 tsp. baking soda and 3/4 c. buttermilk, alternating with 2 3/4 c. sifted cake flour. Add 1 tsp. vanilla and pinch of salt. Add another cup of buttermilk. Do not overmix.
Pour into 2 greased and floured cake pans.

Bake at 350 for 30 min. - Makes 2 layers.

Can serve with red velvet frosting and coconut.
