Crust:
2 pkg graham crackers (20 whole), crushed
1/3 c. sugar
1 tsp. cinnamon
1/2 c. butter, melted

Filling:
1/2 c. cold water
1 pkg. unflavored gelatin
2 egg yolks, lightly beaten
1/2 c. milk
1 c. sugar
1/2 tsp. salt
2 egg whites
1 pt. whipping cream
15 oz. ricotta cheese
1 tsp. vanilla

Directions:

Prepare crust - reserve 1/2 c. for topping. Press rest in 9x13" pan.

Pour cold water in small bowl and sprinkle gelatin over the top and let stand.

In saucepan, combine egg yolk and milk. Beat until well-blended. Add sugar and salt. Stir to dissolve. Cook over medium heat, stirring constantly until it's a thin custard. Add gelatin to hot mixture, set aside until cool.
Meantime, beat egg whites until stiff. Beat whipping cream until peaks form.
Add ricotta to cooled custard. Add vanilla.
Beat until well-blended. Fold in egg whites and whipped cream. Pour filling into cracker crust.
Top with reserved crumbs. Refrigerate for 6 hours before serving.
