Truffle (Ganache)
2/3 c. heavy cream
3 T. butter (unsalted)
2 T. sugar
Splash of rum and almond extract
8-9 oz. chocolate in small pieces (Lindt milk chocolate)

Cake Batter:
3 eggs, separated
2/3 c. butter
2/3 c. flour
5 oz. semi-sweet chocolate (Lindt)
3/4 c. sugar
1/4 c. heavy cream

Directions:
Directions:
Oven - 350º.

For Gananche:
Heat cream, butter, and sugar. Stir constantly. Heat until mixture boils. Take off heat. Add chocolate and flavoring. Stir very well- 15 min. minimum.
Refrigerate several hours or over night.

Cake:
Melt chocolate in double boiler. Do not boil water.
Beat butter and sugar until mixed well. Add yolks. Mix until fluffy. Add chocolate mix. Alternate flour and cream. Add salt. Mix.

Beat egg whites until stiff. Fold into chocolate mix.

Bake 25-30 min. at 350º.
When cool - top with ganache. Cover top with sliced almonds.
