2 pounds baking potatoes cleaned (use a starchy potato for this, such as Idaho (Russet), Yukon Gold, or large red-skinned)
1/2 cup of milk
4 ounces Rondele or other herbed cream cheese
salt & pepper

Directions:
Directions:
1. Peel potatoes. Cut into 2” pieces.
2. Cook in large pot of boiling, salted water until tender – about 20 minutes.
3. Drain well. Return to heat in empty saucepan to dry potatoes out for a minute or two.
4. Meanwhile, place milk and cheese in small saucepan. Heat gently.
5. Mash potatoes with potato masher (do not use food processor).
6. Beat in warm milk/cheese mixture.
7. Taste; add salt & pepper as necessary.
