1 head lettuce
4 ounces dried rice noodles

“A”
6 ounces lean pork, minced
1 egg
1 tablespoon corn starch

“B”
6 ounces bamboo shoots
6 ounces fresh mushroom
4 ounces carrots
2 ounces Chinese mushrooms
4 ounces water chestnuts
2 tablespoons vegetable oil
1/2 teaspoon salt
1/2 teaspoon dark soya sauce
1 teaspoon oyster sauce
1/4 cup chicken soup stock

“C”
1 tablespoon potato starch
1/4 cup water
1/4 cup Hoisin sauce

Directions:
Directions:
1. Mix ingredients “A” and let stand for 15 minutes.
2. Decore lettuce. Wash and dry excess water, then arrange on a platter like a dome.
3. Deep fry the dried rice noodles in 325°F. Drain oil and arrange on platter.
4. Finely chop “B” ingredients vegetables and boil for 1 minute. Drain well.
5. Heat wok to medium hot. Add oil and salt. Add mince pork and stir fry for 1 minute or until medium done.
6. Add “B” ingredients. Stir fry until well mixed. Add dark soya sauce, oyster sauce and chicken stock and bring to boil.
7. Add “C” mixture. Stir and mix well.
8. Place the rainbow minced pork onto the fried rice noodles. Hold lettuce. Place 1 teaspoon Hoisin sauce and dish 4 tablespoons of rainbow pork on lettuce. Fold and roll.
