1 1/2 c. chocolate graham cracker crumbs
1/4 c. butter, melted
1 T. sugar

Filling:
3 8 oz. pkgs of cream cheese, softened
1 1/2 c. sugar
4 large eggs
3 T. cocoa
1/2 c. buttermilk
1 tsp. white vinegar
1 c. sour cream
2 tsp. vanilla
2 1 oz. bottles red food coloring

Icing:
1 3 oz. cream cheese softened
1/4 c. butter, softened
2 c. powdered sugar
1 tsp. vanilla
Fresh mint sprigs

Directions:

Oven - 325º.

Stir together cracker crumbs, salted butter and 1 T. sugar; press into 9" springform pan.

Beat 3 pkgs cream cheese and 1 1/2 c. sugar at med speed for 1 min. Add eggs and next six ingredients, mixing until fully combined. Pour batter into prepared crust.

Bake at 325 for 10 min; reduce heat to 300º and bake 1 hour and 15 min. Remove from oven; cool in pan on wire rack for 30 min. Cover and chill 8 hours.

Beat 1 3 oz. pkg. cream cheese and 1/4 c. butter until smooth. Add powdered sugar and vanilla. Beat until smooth. Spread evenly over top of cheesecake.
Remove sides of springform pan. Garnish with mint, if desired.
