1 cup mochiko
1 cup sugar
1 cup water

Directions:

1. Mix ingredients and stir well.
2. In microwave, cook for 3 minutes on high setting. Take out and mix well.
3. Return to microwave for another 3 minutes on high. Take out and mix well.
4. Return to microwave again for another 3 minutes on high.
5. Sprinkle cutting board with corn starch. Empty mochi and roll into log. Cut into pieces.
6. Roll anko into small balls and place each anko ball into the middle of mochi piece. Completely cover exposed anko with another piece of mochi.
7. Drop anko (see “Anko” recipe) and ready to eat.
