1/2 cup butter
1 1/2 cups sugar
3 eggs plus 1 egg white
4 cups flour
3 teaspoons baking powder
1/4 teaspoon salt
few drops of yellow food colouring
1 egg yolk for glaze

Directions:
Directions:
1. Cream butter and sugar and eggs. Add dry ingredients.
2. Knead lightly and make 2 rolls of dough 1 1/2” in diameter.
3. Slice 3/4” and flatten out dough.
4. Roll anko (see “Anko” recipe) into small balls. Cover with manju dough.
5. Brush top of covered manju balls with egg yolk.
6. Bake at 350°F until golden brown.
