Chicken pieces

Seasoning:
4 cups flour or 2 cups flour and 2 cups breadcrumbs
1/4 cup seasoning salt
1 tbsp. pepper
1 tsp garlic powder
1/8 tsp cayenne pepper
1/4 tsp sugar
1tbsp paprika

Directions:
Directions:
Wash chicken and pat dry.
Make seasoning in a Ziploc bag
Shake chicken pieces in flour mixture

Oven method: Line cookie sheet with parchment paper. Place chicken skin side up.
Preheat oven to 325 degrees.
Drizzle with canola oil
Bake 30 minutes turning once.
Increase heat to 375 degrees.
Bake another 20 to 30 minutes.

Deep-Fry Method:
Preheat oil to 350 degrees.
Lift basket out of oil and place a layer of chicken skin side down (thighs work best for this)
Fry 20 to 30 minutes turning once.

Keep remaining flour in the freezer.

When Nana and Pappy first got married, neither one of them knew much about cooking. Since we both liked chicken, this recipe was the first thing we learned.

Once Pappy and his Dad and Uncle Jim went camping and I cooked 2 chickens for them. Every time Pappy saw me after that, he'd tell me how good that chicken was!
