3 T canola oil
1 red onion finely chopped
1/2 of a yellow, red, orange pepper finely chopped
1 c. chopped plum tomatoes
3 T minced garlic
3/4 lb lingucia grounded
2 c. long grain wild rice
3 c. chicken broth
1 c. rinsed and drained kidney beans
1T chili powder
sea salt and ground pepper to taste
1 tsp paprika
1/2 c. water
fresh parsley for garnish

heat oil in medium stockpot over medium heat. Add onion, peppers and cook for about 8 minutes. Add tomatoes, garlic, lingucia and cook for 10 minutes. Stir in rice and reduce heat to low. Cook and stir for 3 minutes. Add broth, beans, chili poser, salt and pepper, paprika, water and bring to a simmer over medium to high heat. then reduced to medium, cover and cook for about 20 minutes.
Fluff with a fork and garnish with parsley before serving
