10 Ritz crackers crushed
2 T mayonnaise
1/2 tsp. Dijon mustard
1/2 tsp. old bay seasoning
1/4 tsp. Worcestershire sauce
1 tsp. garlic powder
2 scallion leaks finely chopped
1 egg beaten
sea salt and ground pepper to taste
pinch of cayenne pepper
1 lb of fresh crabmeat
1/4 c. bread crumbs
2 T olive oil

For the Rémoulade Sauce:
˝ c. mayonnaise
1˝ tsp. sweet pickle relish
1 tsp. horseradish
1 tsp. fresh lemon juice
1 tsp. minced fresh parsley leaves
˝ tsp. Creole mustard
1 small clove garlic, coarsely chopped
Salt and pepper

Directions:
Directions:
Combine crackers, mayonnaise, Dijon mustard, bay seasoning, Worcestershire sauce, egg, salt and cayenne pepper, garlic powder, scallions in a large bowl.
Stir in crabmeat and mix. Cover and refrigerate an hour. Spread bread crumbs on a shallow plate. Shape chilled crab mixture into 4 small thick patties and coat both sides in bread crumbs
Heat oil in skillet over medium heat and cook crab cakes until golden brown. About 5 minutes per side.
Mix all ingredients to make sauce chill for an hour and serve with crab cakes
