1 lb. of Italian sausage your preference on spiciness chopped
5 eggs
1 bag of fresh baby spinach
1 cup mozzarella cheese
1/2 c. asiago cheese
2/3 c. ricotta cheese
2 green onions finely chopped
1/2 tsp. garlic powder
1/2 c. feta cheese
1 T sour Cream
1 T. olive oil
2 cloves of minced garlic
1 package of refrigerated ready to roll pie crust

heat oven to 375. In a large skillet brown the sausage over medium heat until brown and cool and transfer into a large bowl. Add onion and garlic to the skillet and sauté add spinach for a minute and transfer to the sausage. Add eggs, mozzarella cheese, asiago cheese, ricotta, pepper garlic powder, sour cream, feta cheese, salt and pepper. Line a 9 inch pie plate with 1 of the pie crusts. Spoon in mixture and top with remaining pie crust seal and crimp edges. Poke a few holes in the center of the pie crust and brush with the egg water mixture. Bake at 375 for 1 hour and 20 minutes. Cool slightly before slicing
