3 ft. natural hog casings
2 1/2 lbs. lean pork butt, cubed
1/2 lb. pork fat, cubed
3 t coarse salt
2 t coarsely ground fresh black pepper
2 t finely ground coriander or fennel
2 cloves garlic, finely minced
1 t or more (to taste) crushed red pepper for hot sausage

* Prepare the casings by rinsing in cold water and soaking for about 30 minutes

Grind the meat and fat together using a meat grinder or food processor using the 'pulse' function being careful not to over-process.
Add the rest of the spice ingredients and mix well.
Using a sausage funnel and grinder (hand or electric) stuff the casing.
* If you prefer, you can just make patties by hand.
The patties and links can be frozen.
