4 strips bacon
1 head of garlic
2 Tbsp. bacon drippings
1 7 oz. can minced clams
1/2 tsp. dried basil
2 tsp. cornstarch
1/2 c. puree of tomato
1/4 tsp. pepper
2 Tbsp. grated Parmesan cheese
2 tsp. parsley flakes

Directions:

Cut 4 strips of bacon into 1/2 in. strips.
Fry bacon and 1 small thinly sliced head garlic in chafing dish (or skillet) over low heat until crisp and lightly brown.
Drain off all but 2 Tbsp. bacon drippings and add 1 7 oz. can minced clams, basil and cornstarch. Stir to blend.
Add tomato puree and pepper.
Heat, stirring frequently, until mixture thickens and is steaming, bubbly hot.
Stir in grated Parmesan cheese and parsley flakes.
Use at once as dip with crunchy golden potato chips.
Delicious.
