1/3 c. sun-dried tomatoes finely chopped
2 tsp. olive oil
1/2 c. sweet onion chopped
3 cloves of garlic minced
2 1/2 T. balsamic vinegar
1/4 c. feta cheese
1/4 c. blue cheese
2 T chopped fresh basil
sea salt and ground pepper to taste
1/4 tsp fresh thyme
1/2 c. chicken broth
1/4 c. pinot grigio
2 skinless, boneless chicken breast flatten to 1/4 inch thickness

Directions:

heat 1 tsp. oil in large skillet over medium heat. add onions and garlic cooking for about 4 minutes stirring frequently. spoon into a small bowl and add vinegar.
Combine tomatoes, 1/2 of onion mixture, cheese, basil, salt and pepper and stir well. Place cheese mixture on chicken and fold over securing with toothpicks. Heat 1 Tsp. oil over medium heat and add chicken cook 5 minutes on each side or until done. Remove chicken from pan and put on serving plates covered keeping warm. Add broth, wine, remaining onion mixture and thyme and bring to a boil. Stirring until thick and serve sauce over chicken
