3/4 all-purpose flour
1 bottle of stout
vegetable oil
4 medium baking potatoes cut into 10 wedges
1 T. truffle oil
sea salt and ground pepper
1 egg
Dash Old Bay Seasoning
1 lb. of cod about 6 to 8 small fillets

Directions:

combine flour, beer and 2 tsp. oil, and old bay seasoning in a small bowl and cover and refrigerate for an hour.
Pour 2 inches of oil into heavy skillet and heat to 365. Coat potatoes in truffle oil and add potatoes in batches and fry for 5 minutes or until browned turning once. Drain on paper towels and salt to taste.
whisk egg in a bowl until frothy and add to flour mixture. Return oil to 365 degrees and dip fish into flour mixture and fry in batches until golden turning once.
