2/3 c. coarsely chopped pecans
3 (2.75 oz.) pkg. quick cooking wild rice
1/4 c. butter
1/2 c. chopped onion
1/2 c. chopped celery
2/3 c. chopped dried apricots
1/2 c. chicken broth
1 tsp. each, salt and orange zest
1/2 tsp. pepper
1/4 c. parsley

Oven: 350º ~ Yield: 8 to 10 servings
Bake pecans in a single layer in a shallow pan 5 to 6 minutes or until lightly toasted and fragrant, stirring halfway through. Set aside. Cook rice according to package directions. Cool slightly. Melt butter in a large skillet over medium heat. Add onion and celery; sauté 5 minutes or until tender. Stir in next 5 ingredients and rice; cook 2 minutes or until liquid is absorbed. Remove from heat; stir in parsley and pecans.
