2 small onions
2 cloves of minced garlic
1 T olive oil
1 lb. ground lamb
1/2 C. good red wine
1 c. diced flavored tomatoes
2 T chopped fresh parsley
3/4 tsp. dried oregano
1/2 tsp. allspice
1/8 tsp. nutmeg
1/8 tsp. cinnamon
salt and pepper to taste
1 large eggplant
4 T. butter
1/4 C. flour
1/8 tsp.. nutmeg
2 oz and 1/2 C Parmesan cheese
2 eggs
2 cups of milk

cut off ends of eggplant and cut in circles 1/2 inch thick and salt and set aside for about 15 minutes. Heat oil in skillet over medium heat and add onions and garlic sauté until soft. Add lamb and cook until no longer pink. Add wine, tomatoes, parsley, oregano, allspice, cinnamon , nutmeg, salt and pepper. lower heat and simmer for about 20 minutes and let cool. Rinse eggplants of salt and pat dry. Put on baking sheet and broil until soft 6 to 8 minutes turning once. Heat oven to 325. In a small saucepan melt butter and stir in flour stirring until bubbly. slowly stir in milk more nutmeg and salt and pepper to taste. Bring to boil stir in grated cheese and beaten eggs stir until thick and remove from heat.
In a 2 quart casserole dish layer 1/2 the eggplant slices and top with lamb mixture and add remaining eggplant on top of this. Spread sauce over eggplant and sprinkle with remaining cheese. Bake 50 minutes until browned and knife inserted comes out clean
