1 C. Fresh Bean sprouts
1/2 C. thinly sliced green onions
1/4 c. finely chopped celery
1/4 Tsp minced garlic
5 oz. fresh chopped shrimp
2/3 c. egg beaters
1/2 tsp, vegetable oil
Sauce
1/2 cup low sodium chicken broth
1 T light soy sauce
1 T dry sherry
a few drops sesame oil
Freshly ground black to taste
1 teaspoon cornstarch dissolved in 4 teaspoons water
1 tsp. oyster sauce

spray a skillet with pam and place over medium heat. add bean sprouts, onions, celery and garlic and sauté until tender about 5 minutes. Remove from heat and place in a bowl. Add shrimp and gradually add egg beaters. Add oil to skillet and heat until hot. Spoon 1/4 shrimp mixture for each pancake and cook about 2 minutes each side. Repeat with remaining mixture.
Add all ingredients for the sauce in a small saucepan and stir until thick. Pour over pancakes
