4 T butter
1/2 C finely chopped fresh mushrooms
2 C cooked lobster
1 C dry white vermouth
1 c. heavy cream
1 c. sour cream
1/2 c. jarlsberg cheese plus 2 T for topping
2 T sherry

Scrub potatoes pat dry and make a deep slice down the middle of the potatoes and bake on oven rack at 375 for an hour. In a small bowl whip together the sour cream and heavy cream and refrigerate. Once potatoes are tender cool and then scoop out pulp into a bowl and salt and pepper and mash and reserve. In a skillet add butter and sauté chopped onion and mushrooms for about 3 to 4 minutes. Add Sherry, lobster meat, vermouth and bring to a boil and reduce liquid about 5-6 minutes. Add the heavy cream mixture from the refrigerator and remove from heat. Add this mixture to reserved potatoes and 1/2 c. cheese. Add 1 to 2 T more of heavy cream if needed. Stuff the potato shells with mixture and sprinkle with cheese. place on baking sheet and bake at 400 until the cheese is bubbly .
