2 medium eggplants
salt & Pepper
14 oz. ricotta cheese
2 large eggs beaten
1/2 c, shredded mozzarella
1/2 c. Romano cheese
2 T. toasted almonds
2 c. spaghetti sauce (see my recipe)
Fresh basil, oregano chopped to taste

Directions:
preheat oven or outside grill to 375. Cut off ends of eggplant and cut them lengthwise into 1/2 inch slices. place on a baking pan and sprinkle with salt and let sit for about 15 minutes. Rinse and pat dry. place eggplant slices on the grill and brown on each side about 4 minutes per side. Remove from grill and cool. In a large bowl, beat eggs, add ricotta cheese and mozzarella and Romano cheese and almonds. Add spices and mix. Place cheese mixture on one end of eggplant slices about a tablespoon each and roll placing seam side down in 13x9 grill proof pan with a small amount of sauce on the bottom of it. top with sauce and sprinkle with Parmesan cheese and grill or bake for 15 minutes
