1 loaf of French bread cut into 1 inch cubes
1 pkg. cream cheese cut into 1 inch cubes
1 pint of blueberries
2 pints of egg beaters
3 eggs
2 cups of milk
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla extract
1/3 c. real maple syrup
1 cup sugar
2 T cornstarch
1 C. water
1 cup fresh blueberries
1 T butter

Directions:

In a 9x13 greased baking dish add half of the bread cubes and top with the cream cheese then add the blueberries and top with remaining bread cubes.
In a large bowl add egg beaters, eggs, milk vanilla extract, cinnamon, nutmeg and syrup. Pour this over the bread cubes cover with foil and refrigerate overnight.
Take out 30 minutes before cooking the next day to avoid cracking your casserole dish. Cook covered for 30 minutes remove foil and cook another 30 minutes. Casserole should be firm.
Meanwhile, in a medium saucepan mix the sugar, cornstarch and water and bring to a boil. Stirring for 3 minutes. Mix in 1 cup of blueberries and reduce heat and simmer for 10 minutes. stir in butter and pour over the baked French toast
