7 egg whites, unbeaten
1 1/2 cups granulated sugar
1 1/2 cups crushed cookie crumbs*
1 1/2 cups pecans
1 1/2 cups coconut
1 teaspoon vanilla
1 (9") unbaked pie shell

Directions:
Directions:
Preheat oven to 325º. Mix all ingredients together and stir by hand. Pour into unbaked pie shell. Bake until glossy and set (about 25-30 minutes). Do not overbake! Serve warm with sliced bananas and cool whip or a scoop of vanilla ice cream.

*Traditionally this recipe uses graham cracker crumbs, but we suggest crushing your favorite cookie. Our version uses homemade chocolate cookies.
