1 c. all-purpose flour
1 T cornstarch
1 tsp. baking powder
Salt and Pepper to taste
1 egg
1 cup of Ale beer (Cape Cod Beer)
2 ears of corn of the cob roasted
1 cup black beans
1/2 c. Greek yogurt
1/2 c. mayonnaise
juice of 1 fresh lime
1/2 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. dried dill weed
1 tsp. ground cayenne pepper
1 quart oil for frying
1 lb. of cod fillets cut into 3 oz. portions
8 mini tortillas slightly grilled on the grill
chopped lettuce

In a large bowl combine flour, cornstarch, baking powder and salt and pepper. blend in egg and beer and whisk into flour mixture. Set aside. In another bowl mix yogurt, mayonnaise. Slowly add lime juice and seasons. Heat oil in a deep-fryer to 375 degrees. Dust the fish pieces lightly in the flour and dip in beer batter and fry until crisp and golden brown or on the grill and drain on paper towels. Lightly fry or grill tortillas to get a little crisp texture. Cut off corn from roasted corn of the cob and mix with black beans in a small dish. Serve with fried fish in tortilla, corn mixture, lettuce and your sauce.
