1 lb. penne Pasta
3/4 lb. Sharp cheddar cheese shredded
1/2 lb. Gruyere cheese shredded
1/2 c. shredded Asiago Cheese
1/2 c. Ricotta Cheese
3 T butter
3 T flour
2 C. milk
1/2 tsp. onion powder
1/2 tsp. Chile and garlic powder
salt and pepper to taste

Heat oven to 350. spray 2 qt baking dish. Bring a large pot of water to a boil and cook pasta for about 6 minutes and drain. In a large bowl combine all cheeses and set aside. Melt butter in a medium size pan and whisk flour until smooth bubbly. slowly add the milk and whisk adding onion powder salt and pepper and Chile and garlic powder. Bring to a boil and reduce heat simmering for 3 minutes. Remove from heat and whisk in 2 1/2 cups of the cheese mixture. In the pasta pot, add drained pasta and the cheese sauce. pour half of pasta mixture into prepared baking dish sprinkle with generous cup of the cheese. spoon remaining penne into dish and top with the remaining cheese. Cook for 20 minutes
