2 lbs ground beef
4 eggs
½ pkg onion soup mix
2 tsp salt
½ cup rolled oats
Bacon strips
Swiss or mozzarella cheese slices
Fine bread crumbs
1 can mushroom soup
3 – 4 tbsp oil
1 cup milk
salt and pepper
Directions:
Directions:
Mix beef, eggs, onion soup mix, salt, and rolled oats. Shape into thin patties, each approximately 3” in diameter. Place a strip of bacon and cheese slice on each; roll up jelly roll style, making sure the bacon and cheese are covered. Beat remaining 2 eggs, dip meat roll on eggs and roll in bread crumbs. Saute rolls in oil, turning often until done, about 25 minutes. Discard excess oil. Place meat rolls in a casserole dish, heat mushroom soup, blend in milk, salt and pepper to taste. Pour mushroom sauce over top and sprinkle with parsley. Bake at 350˚F for 25 to 30 minutes.
