1 lb. ground beef
1 large onion chopped
3 cloves of chopped garlic
4 oz. mozzarella cheese shredded
4 oz. asiago cheese shredded
1/2 c. Italian style bread crumbs
1/4 c. chopped fresh parsley
1 egg
salt and pepper to taste
18 giant shells cooked until tender
30 oz. of spaghetti sauce (see my recipe)
1/2 c. of good red wine. Not something you wouldn't drink
1/2 grated Parmesan cheese

In a skillet brown beef, onion and garlic until crumbly. Drain excess fat and cool. Stir in cheese, bread crumbs, parsley and egg. Add salt and pepper. Mix well. Spoon 1/2 the sauce over a 9x13x2 inch baking dish. Stuff shells with meat mixture and place in baking dish side by side in a single layer. Mix Red wine with the remaining sauce and pour over the shells. Sprinkle with cheese. Bake at 400 for 20 to 25 minutes or until brown and bubbly.
