1 cup uncooked long grain white rice
2 cups of chicken broth or vegetable
1 medium sweet chopped onion
3 cloves of garlic minced
1-2 tbl of fresh lemon juice
1 tsp of fresh oregano chopped
1/4 Lb of fresh baby spinach chopped
5 oz of crumbled feta cheese
Salt and Pepper to taste

Directions:
Combine rice and broth in a medium saucepan and bring to a boil. Stir once or twice and reduce heat and cover, simmer for about 12 minutes or until rice is tender and liquid is absorbed. In a small fry pan, sauté onions and garlic until tender. Add lemon juice, oregano, spinach, cheese and salt and pepper to the cooked rice and toss unit spinach is wilted.
