3 cups dates
1.1/2cups almonds
1cup desiccated coconut
1/3cup coconut oil, melted
1tbsp vanilla extract
1/2cup cocoa

Directions:
Directions:

Pour enough boiling water over the dates to cover them, leave them aside for 15minutes. Strain the water off & save a couple of tablespoons in case you need it later. Place the almonds and coconut in a food processor and pulse until the mixture looks like coarse sand. Add the dates, coconut oil, vanilla and cocoa and blitz until you have a thick paste. You may need to add a little of the date water to thin it down but be sparing, you don't want it to sloppy (it should be the consistency of playdough). Press the mixture into a baking paper-lined tin and flatten the top. Chill then cut into 24 squares and sprinkle with cocoa. They are very sticky but very yummy
