2-1/2 C Water
1 tsp Salt
1-1/4 C Corn Meal
1 C cold water

Butter
Maple syrup
Bacon

Directions:
Directions:
Boil 2-1/2 C water and 1 tsp salt over medium heat. Mix 1-1/4 C corn meal with 1 C cold water. Add mixture slowly to boiling water, stirring constantly.

Pour cooked corn meal into a 7-3/8" x 3-5/8" x 2-1/4" loaf pan. Chill until set, about 1 hour. Cut into 1/2" thick slices (Grandma Ruthie sliced them a little thinner cuz she - and my children - liked them crispy! The crispier the better!) Lightly grease griddle or skillet and pre-heat over medium high heat. Fry mush slices 4-5 minutes on each side until golden brown. Serve with butter, syrup and bacon.

This was Eric's Favorite meal when Grandma came to visit. She usually had to make several loaf pans and she fried them extra crispy. I believe she was usually requested to make this and her yummy fried chicken the most... (which, by the way, she says she just coated chicken with flour and fried it in Crisco. There ya have it, her recipe for Fried Chicken along with this one...
