Burritos - Freezer Friendly Brown Bag Recipe

Ingredients: |
Ingredients: 1 pound of lean ground beef ½ to 1 can of refried beans (I use ½ can) 1 can of enchilada sauce (I use tomato sauce that I add spice to) 1/4 cup water (sometimes I just use more tomato sauce) 2 tablespoons diced onion ½ package of taco sauce (or 1 1/2 teaspoon chili powder, 1 1/2 teaspoon garlic powder & ½ teaspoons salt – I think of this as seasonings to taste) ½ teaspoon dried oregano
1 1/2 cup grated cheddar cheese
10 large flour tortillas
Shredded lettuce Finely chopped sweet red or green pepper (optional)

Directions:Cook ground beef and place in a wire mesh strainer to drain off any fat. Return to the pan. Add all ingredients (except the cheese, sweet pepper, lettuce, and tortillas) to the meat. Simmer for 20 - 30 minutes until thick.
Spoon ½ cup of meat mixture onto tortilla and sprinkle with cheese. Fold in sides and bottom of the tortilla.
Wrap each burrito in paper towel and then in a square of foil. Put in zip lock bag and freeze.
To heat: Remove foil and put in microwave for 1- 2 minutes. Can also leave foil on and heat for 30 minutes in oven. Open and add shredded lettuce and chopped red pepper. |

Notes: I think that the spices are whatever you want. I also think you could add celery and carrots and peppers to the ground beef. The mixture needs to be thick so the burrito is not soggy.
