1 lb ground beef
3-4 chicken thighs
1 c chopped onion
1 tsp salt
1 tsp garlic powder
3 c cooked rice
1 can Rotel - undrained
12 oz sour cream
1 c grated Monterrey Jack cheese (or more)

Directions:
Directions:
Brown ground beef with onions and seasonings in a large pan. Boil chicken thighs until done. Cook the rice in the broth left from cooking chicken. Add chicken to the sausage. Add tomatoes, rice, and sour cream to the meat and mix well. Pour mixture into greased 9x13 inch pan and top with cheese. Bake at 350º for 20 min.
