4-6 chicken breasts, cooked and shredded
2 cans cream of chicken soup
1 or 2 cans Rotel - drained
1 pkg Taco seasoning
1-16 oz container sour cream
2-3 c shredded cheese
flour tortillas

Directions:
Directions:
Mix chicken, 1 can soup, 1 can rotel, and 1/2 of the cheese, 1/2 of the sour cream, and 1/2 of the taco seasoning.

Spoon mixture into tortillas and roll. Place into a 9x13 in pan.

In the same bowl, mix the remaining soup, rotel, cheese, sour cream, and taco seasoning. Spoon over rolled enchiladas.

Bake at 350º for 20-25 min.

I use a rotisserie chicken and shred it rather than cooking chicken breasts. A 3 lb chicken will give you plenty of meat.
