2 lb Italian sausage
1 clove garlic, minced
1 tbsp whole basil
1 1/2 tsp salt
28 oz can crushed tomatoes
18 oz can tomato paste (3 6 oz cans)
8 oz can tomato sauce
½ C sugar
10 oz lasagne noodles - cooked (6 noodles total)
3 eggs
1 large container Ricotta cheese
1/2 cup Parmesan cheese
2 tbsp parsley flakes
1 tsp salt
1/2 tsp pepper
12 slices full fat mozzarella cheese

Directions:
Directions:
Brown meat slowly, spooning off excess fat. Add garlic, basil, salt, tomatoes, tomato paste, tomato sauce and sugar. Simmer uncovered 30 minutes, stirring occasionally.

Beat eggs. Add Ricotta, Parmesan, parsley, salt and pepper. Mix well.

Layer 1/2 of the lasagne noodles in the bottom of a 9x13 inch baking dish. Spread half the Ricotta mixture, half the mozzarella cheese, and half the meat sauce. Repeat layers.

Bake 375º for about 30 minutes. Let stand 10 minutes before serving.

Modifications -
Use more garlic and basil. Add extra parsley to ricotta mixture.
i find it a bit salty, so I use half the salt it calls for.
I don't cook my noodles - I still use the traditional noodles. Just coat the bottom of the pan with sauce before layering the noodles. Assemble it early to let the noodles soak up the liquid for a while (an hour or so). Bake it for 45-60 min instead.
