Ingredients: 8 potatoes (medium to large, peeled and cut in chunks) 3/4 cup milk 1 tsp. salt 1 stick butter

Directions:Place cut potatoes in large pot and cover with water. Add several shakes of salt. Bring to a boil, then turn down heat a little and cook till fork, inserted in potato, pierces it easily. About 10 to 15 minutes depending on size of chunks. Drain potatoes in strainer then transfer to mixing bowl. Beat potatoes with butter using whip attachment to break up potatoes (they should be fairly soft) for a minute or two. Then add salt and slowly add milk as it's whipping, Turn mixer to low while you add the milk or it will splash out. Turn up mixer all the way after milk is mixed in. Whip for 3 minutes or until no longer lumpy. Add more milk as needed for desired consistency. |

Notes: Mom taught me how to make these. Let the kids peel and chop up the potatoes. This a a must have with roast, turkey, or ham dinners. Use the leftovers (rarely happens!) for potato cakes or Shepherd's Pie. Don't forget to serve with a big chunk of melting butter on top.
