4 med ears raw fresh corn
2 ripe avocados chopped
1-12 oz jar roasted red bell peppers, drained and chopped
2 green onions, finely chopped
1 tomato, seeded and minced
1 jalapeno pepper, seeded and minced
3 tbsp cilantro, minced
2 tbsp lime juice
1 tbsp white wine vinegar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground cumin

Cut corn from cob. Combine all ingredients. Cover and chill 2+ hours
