Notes: This recipe comes from a cookbook called Burnt Offerings. It is a collection of recipes by priests and bishops of the archdiocese of Chicago and beyond. Rev. Bob Miller is the submitter. I was given this cookbook in July 2013 while visiting my late Mom's cousin who lives just outside Chicago in Villa Park. I did not use olive oil in the pan as I have a non-stick, but put a splash of olive oil in the sauce mixture. I also added a purple pepper to the mix that I had grown in my garden. I'm thinking of experimenting with mushrooms as well next time.
