2 chicken breasts, boneless, skinless, diced into chunks
4 tablespoons ketchup
4 tablespoons honey
Chopped garlic
Dash of lemon juice
Dash of Worchestershire sauce
Chili powder
Olive oil
Chopped onion (optional)

Directions:
Directions:
Mix everything except chicken in a bowl. Heat a generous amount of olive oil in pan on stove top. Spoon the chicken and sauce into it. Cook. Flip frequently and keep it moving. When chicken is brown, turn down heat. Serve over rice. Serves: 2

This recipe comes from a cookbook called Burnt Offerings. It is a collection of recipes by priests and bishops of the archdiocese of Chicago and beyond. Rev. Bob Miller is the submitter. I was given this cookbook in July 2013 while visiting my late Mom's cousin who lives just outside Chicago in Villa Park. I did not use olive oil in the pan as I have a non-stick, but put a splash of olive oil in the sauce mixture. I also added a purple pepper to the mix that I had grown in my garden. I'm thinking of experimenting with mushrooms as well next time.
