1 tbsp olive oil
1/2 diced onion
1 tsp salt
1 c + 1/4 c Arborio rice
1/2 c white wine or broth
3 c + more chicken broth at RT
1 c Parmesan cheese

Directions:
Directions:
Saute onion in olive oil for 10 minutes, add salt
Add rice and stir until rice is translucent and opaque in the center
Add wine or broth, stir until it's absorbed
Add 3 c of chicken broth
Pressure cook on high for 4 minutes
Release pressure
Stir and add more chicken broth if necessary, until creamy
Add cheese, stir, and serve
