1 c. butter
1 1/2 c. sugar
5 large eggs, separated
3 c. flour
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. nutmeg
1 c. buttermilk
2 c. blackberry jam
1 c. pecans
1 tsp. vanilla
1 tsp. lemon extract

Caramel Icing:
1 pkg light brown sugar
3 T. flour
1/4 c. cold water
1/2 c. butter
1 pkg. powdered sugar
1 tsp. vanilla

Directions:
Directions:
Oven - 325º.

Beat butter and 1 c. sugar until fluffy. Beat in egg yolks. Gradually add dry ingredients that have been sifted together (1 c. flour, b. soda, cinnamon, and nutmeg).
Beat in buttermilk and jam. Beat in another cup of flour.
Combine remaining 1 c. of flour with nuts.
Stir into batter along with extracts.

Beat egg whites to soft peaks. Gradually ad remaining 1/2 c. sugar. Fold beaten whites into batter.

Pour into 2 9" layer pans. Bake for 45-50 min.

For Icing:
Cook brown sugar, flour, water, and butter to a softball (230º). Cool 10 min. without stirring.
Add powdered sugar. Beat to a spreading consistency. Add a few drops of hot water if it becomes too stiff.
